My Staffie in South Africa was fully bite trained. She did attack work etc and was one of the best at it. She made a fool of the other dogs as she always gave 110%.
Although she was protection trained to a very good standard, i had people come from all over to watch her, she never became man aggressive as to her it was more of a game.

imho we should leave the sleeve for other breeds, if your talking about the protection work type.

i think think a good stafford is about the best breed you can get for this, from a sporting perspective. because they can be thrown around more easily than the big guarding breeds, so they have to have more tenacity and courage. also it is nice to know how your stafford would react if needed. It helps to have a little training as staffords are so friendly they are reluctant to bite people. but once they are assured what to do, then they take to it better than most other breeds as it is just a bloody good game to them.

all mine are trained in protection work except the collie having worked in security with my mali and shep i needed to know no matter what they would be there. but they know when we are "working" and when its all for fun and they love it but i agree if your encouraging bite work of any kind do it with someone who knows what they are doing but i use bite rolls as a toy for any dog its just another tug toy really which you can use to encourage a fuller bite
